I've had a busy day in the kitchen today! I will be working the rest of the week, late afternoon into the evening. I wanted to get as much of my Thanksgiving dinner done ahead as I could. Today I prepared Butternut Squash-Apple Soup, Great Grandma Freid's turkey dressing, and sweet potato casserole with pecans. And just because I had nothing else to do, I made a batch of Tollhouse cookies for my favorite son-in-law.
However, there was still tonight's supper to be made. While digging through my recipe box, I came across a recipe that I wrote down from Southern Living Magazine back in September 1991; it was for apple pork chops. I purchased at Wegmans their "from family farms near our stores, pork loin chop frenched bone" for $7.99/lb. The two chops were thick cut, in fact one was about 2" thick. They were delicious! To go along with the pork, I made oven roasted potatoes with fresh rosemary and corn.
