Thanksgiving is over and I think my menu was well received. I’m not sure if everyone was pleased with the three ravioli per person portion. It met the criteria of having pasta on a holiday, and it was enough so that you didn’t get full before the main course. The hotel style turkey breast from Wegmans worked out perfectly and was moist and delicious. The short ribs were also delicious and there was enough left over for supper for my husband and I. I’m glad that I prepared a day ahead and reheated them in the crock pot. Once the meat was chilled, I was able to remove the solidified fat from the sauce. I did forget to reduce the sauce before serving, however, but I don’t think anyone noticed. The recipe is from Mr. Prime Old Tyme Butcher in Manansquan, NJ. The shop was owned by Nicholas Edward LoVarco. Mr. LoVarco passed away in April of this year. A Yelp reviewer stated that Mr. LoVarco’s son and wife are running the business. Tonight, I served the short ribs with Parmesan, garlic and herb mashed potatoes and New Jersey broccoli from Delicious Orchards, Colts Neck, NJ.
