A few weeks ago, my brother sent me a recipe he found at allrecipes.com for scallops with lemon and basil sauce. Last week, Whole Foods had scallops on sale for $16.99/lb., which was a terrific price for local, dry sea scallops. Prep and cooking for the recipe was only fifteen minutes; you can't beat that. Other than the sea scallops, I had to purchase a lemon and fresh basil. Before leaving for work I pulled out the pans I would need. I thought some pasta would be nice to accompany the scallops. I called my husband when I left work to turn the pasta waster I prepped. The prep for the scallops was super easy. I zested a lemon for the sauce, squeezed out some lemon juice, tossed the scallops with some pan searing flour and sliced the basil. My husband had our bistro table set on the porch with candles and in under 30 minutes we were having dinner. The sauce was just perfect, slightly lemony, but not overbearing and the basil was a nice accent for the scallops. Another fabulous, quick meal.
