It was an easy recipe to prepare. After minimal prep, the dish came together in just under an hour. As I was making a much smaller quantity of chicken than the recipe called for, I adjusted my ingredients accordingly. I made about pound of chicken and used one cup of tomatoes. In hindsight, I should have added a bit more to have a little more sauce for the penne that I made to accompany the dish. It was a delicious meal for a rainy day. The garlic and rosemary really enhanced the sauce. It's a recipe that I will make again. On another note, as we were sitting down to dinner last night, a text message came through from my son-in-law. I must say, he loves to cook and is quite creative. He's know to make a fabulous short rib ragu. Last night he prepared braised lamb shanks. He got the lamb shanks at Whole Foods for $8.99/lb. He kept is preparation simple, however, I don't have a specific recipe. It looks delicious and he said that it came out good. I wish I could have been there for dinner last night! Index
