About five years ago, my family in north Jersey discovered a ravioli maker in Totowa called Fontanarosa Gourmet Specialty Foods. Fontanarosa has been located on Lincoln Avenue in Totowa since 1982. I don't know how my family missed this one. However, whenever I'm in in the area, I like to pop and and purchase unusual, but extremely delicious ravioli. Several weeks ago my husband and I happened to be in north Jersey and we made a stop at Fontanarosa. I purchased butternut squash, apple and walnuts ravioli. Earlier this week we had the butternut squash ravioli. I dressed the ravioli with Williams-Sonoma's butternut squash pasta sauce. While the W-S sauce was delicious, I think the next time I'll try a simple butter sauce with a splash of Delicious Orchards Apple Cider to bring out the apple flavor in the ravioli. I also purchased grilled pears, Gruyere cheese ravioli. The sales person at Fontanarose suggested a butter sauce with the grilled pear filling and adding some jar pears to the sauce. I'll let you know in the future how we like that one. Fontanarosa also makes fresh cheese ravioli on Friday's. I haven't tried them yet, but my sister raved about them.
Also, you can find can purchased Fontanarosa Ravioli at area green markets. During the month of April they can be found at Long Valley Green Market in Long Valley, NJ. I'm told by the owner that he does have someone that will sell his ravioli this summer at green market in Brick, NJ. I'll have to keep checking Fontanarosa's webpage for the date and location. Index
