Perhaps breakfast for supper will suffice. I recently shared Sara Moulton’s recipe, from “Sara’s Weeknight Meals,” for Broccoli and Goat Cheese Souffléed Omelet. Frittatas are another favorite of mine; try Cherry Tomato Frittata with Corn, Basil and Goat Cheese.
Although I haven’t made these in a long time, paninis are another great summertime choice. Two of my favorite are Garlicky Broccoli Rabe, Fresh Mozzarella and Tomato Jam Paninis and Chicken Panini with Pesto and Mozzarella. I have a panini press, if you don't, you can use a frying pan. Place a heat resistant plate on top of the sandwich and place a 28-35 oz. can of tomatoes on top of the sandwich and press down on it has it begins to heat up. Remove the plate, turn the sandwich over and repeat. Some delicious summertime desserts include Basic Mason Jar Ice Cream from The New York Times. My all-time favorite summer dessert is Blueberry and Nectarine Buckle from Gourmet Magazine. Another gem is Chocolate Mug Cake also from The New York Times.
