Today begins 40 days of Lent, a period of fasting and abstinence. During this time, no meat is eaten on Ash Wednesday and each Friday during Lent. For tonight’s supper, I will be preparing Spaghetti with Fried Eggs and Roasted Peppers. The recipe can be found in the cook book Naples at Table, by Arthur Schwartz. Arthur is the former food editor at the NY Daily News and was a radio talk show host of ‘Food Talk’, which was on WOR710 AM radio. During his time on the radio he wrote Naples at Table and also made an appearance in our area. This dish was made when he was at River House Restaurant in Brielle when Toni Frio was the chef there. It’s a quick and easy dish that is simple and delicious to prepare. When I want to make roasted peppers, I use my gas grill and turn the flame up to high. I take out the core of the peppers and any seeds. I rinse and pat dry and place on the grill. Char peppers on all sides. Once the peppers are done, you can either place them in a paper bag or in a bowl covered with plastic. When they have cooled, peel the skin from the peppers and remove any seeds and any white fibrous ribs. Cut the peppers into thin strips. If you prefer to do your peppers indoors, Ina Garten has a simple to follow recipe. It’s a simple and easy dish to prepare that can be done in 45 minutes. A nice side salad would complete this lovely
