Are you fortunate enough to be off today for President's Day? If so, are you catching up on a few things? I know that I'll be heading to a food store to purchase this week's special values. Also, this being Lent, you also have to think of what you’ll be preparing for supper Friday night. Sure you can call out for pizza, but how long are you going to wait for delivery or even pick up. Don’t forget, I have Arthur Schwartz’s easy pizza dough recipe on my site. You can make it today and refrigerate until Friday night. You can even make homemade pesto sauce using Marcella Hazan’s recipe. Make it on Monday and save it for Friday night’s supper. This week I think I’ll prepare a frittata. The recipe I selected is tomato, garlic and potato frittata from the May 2001 issue of Gourmet Magazine. The recipe takes 30 minutes from start to finish. You can add a nice tossed salad to round out the meal and perhaps some crusty Italian bread to go with it.
You’ll need 8 eggs, parmesan cheese, 4 cloves of garlic, ½ pound boiling potatoes and 2 cups (6 ounces) of grape tomatoes. If you’re at Costco this week, you can pick up your parmesan cheese there at a reasonable. However, purchase by the piece, not pre-grated. Delicious Orchards has on special until Thursday grape tomatoes for $1.69 per carton. In fact you can get all your items at Delicious Orchards and they’ll even do the shopping for you at no extra charge! I’ve been using this service since the beginning. You can either phone your order in, or I prefer to place my order on line. It’s a real time saver for me and the quality of their produce is outstanding. I do go to the store every so often just to see if they’ve added new products or have a seasonal product that might not show up on line. Unfortunately, they are closed on Monday’s.
