I am working today and won't get home until late. I have prepped  tonight's supper. My husband had a request for chicken cordon bleu. I don't even remember where I got the recipe, but it's fairly easy and rather quick to prepare. 

The basic ingredients needed to prepare this dish is boneless chicken breasts, sliced Swiss cheese, sliced ham along with flour, salt, pepper, onion powder and garlic powder.
At this point, I don't have an exact recipe, but I'll try my best to give you one. 
  • Take boneless chicken breasts and pound out gently with flat side of meat pounder
  • Take a slice of deli ham and a slice of Swiss cheese and layer in the middle of the chicken (I prefer Wegmans deli hams)
  • Roll the chicken and encase the ham/cheese. Using a toothpick, close the roll so it doesn't open during cooking.
  • Take some flour and season with a bit of salt, pepper, garlic powder and onion powder. Roll the chicken in the seasoned flour.
  • Next, make an egg wash and roll the chicken in the egg wash
  • Roll the chicken in breadcrumbs.
  • In a open skillet, add some vegetable oil and heat. Add the chicken rolls and cook until brown on all sides. 
  • Add a little bit (start out with perhaps 1-2 tbsp.) of water and cover. Lower the flame and let the steam finish cooking the chicken through.
I also pre-made some rice for tonight's supper. I had approximately 1-3/4 cup of chicken stock (Kitchen Basics) left in the refrigerator and added that to a saucepan along with a cup of rice. As the rice cooked, I add an additional cup of chicken stock. All total, I probably used about 2-1/2 cups of chicken stock. I purchased some green zucchini, which I'll slice on my mandoline, and brush with some olive oil. I can either use my grill pan or put on the outdoor gas grill to cook. Dinner done!
