I hope everyone enjoyed their holiday yesterday as mine was certainly filling. There was antipasto, penne vodka pasta, ham, chicken Marsala, corn casserole and roasted vegetables. By the time dessert came out, my nephews and their families had left and we had more desserts than we could eat. So today, it was penance for the rich foods eaten on Easter. Today was a Wegmans shopping day. Once I completed my shopping list, it was time to decide on supper. Wegmans offers many meal options that include meals to go to and EZ entrees that are oven ready. However, today I found turkey breast fillets tagged Special Today (regularly, $5.79/lb.) for $4.06/lb. The turkey fillets were nearing its expiration date and I knew I could come up with a recipe.
When I returned home, I made a quick visit to www.epicurious.com to find an easy recipe for turkey scaloppini with capers and lemon. The recipe received great reviews and it only took about 25 minutes to make. To add to a stress free supper, I had just enough couscous left in the pantry for a side dish. To jazz this up, I added Williams-Sonoma Organic Vegetable Stock Concentrate to the water for more flavor. For a vegetable, we had Wegmans Special Blends side dish of Petite Brussels Sprouts with red onion in a garlic herb sauce, delicious! The Brussels sprouts retail for $3.99 a package, but occasionally Wegmans will have a $1 off coupon on their app. I must say both my husband and I enjoyed this meal tonight as it was light, but tasty. I would definitely make this again. Other reviewers used pork, chicken and veal with great success. Index
