​With the cooler temperatures and a change in seasons, it’s time to bring back autumn favorites. So I baked a batch of Lora’s Ginger Cookies the other day. It was a nice change from chocolate chip cookies and the ginger is a nice segue into fall. This weekend I will be making pumpkin biscotti. There is no butter or shortening in this recipe, moisture will come from the brown sugar, canned pumpkin and eggs. I won’t need all the pumpkin from the can so I will prepare Autumn Loaf as muffins and share some with my granddaughter.
​Breakfast options include pumpkin cranberry bread. Again, this recipe can be made into muffins with adjusted baking time. Another favorite of mine is pumpkin walnut flapjacks, yum! Did you purchase apple cider recently? Besides mulled cider, how about making a batch of apple cider biscuits? They are great alone or served alongside fried chicken or ham.
 
For entrees, Bernice’s brisket is wonderful. It’s a complete one pot meal with meat, potatoes and carrots. It does take two days to make as cooking the second time really brings the flavors together. My local Foodtown has brisket on special next week.
 
Williams-Sonoma has quite a few of Giada DeLaurentiss sauces and starters on special.  I purchased Giada De Laurentiis Braising Sauce, Pot Roast with Porcini Mushrooms (originally $16.95 now $4.99). It just so happens that I need beef chuck cubes for this recipe. My local ShopRite has chuck roast on special next week for $2.99/lb. I’ll cube it myself and this will make for an easy supper.
 
Other easy one pot meals that are sure to please everyone in your house are arroz con pollo and chicken and dumplings. Soup is another great easy supper paired with a simple sandwich. My favorites are butternut squash-apple or pea soup.
