My neighbor has once again shared his bounty from the sea. Tonight  I am preparing fluke, oven roasted herb potatoes and a vegetable. 
I took the three pieces of fluke that my neighbor gave me and coated them in seasoned flour (salt and pepper). I then dredged the fish in an egg wash and coated them in Panko breadcrumbs. A quick saute in corn oil to get them golden did the trick.  For the herb potatoes, I went to my garden for some sprigs of rosemary, thyme and parsley. I finely chopped them and added them to a russet potato that I made into wedges. I coated the potatoes with some corn oil, added my herbs, along with salt and pepper. I baked them in a 400 degree (I used my convection setting of 375 degrees) and baked until golden. A vegetable and this meal was complete in approximately 30 minutes.
