Yup, I dug in my recipe file archives and found more delicious and easy pork recipes for those nights you’re going to baseball, lacrosse, softball or working the closing shift. I’m combining two nights of suppers here in this post. I hate to kvetch, but working an erratic work schedule throws your time management skills into overdrive. I can't imagine if I had young children, worked and had schlep kids around to their various activities while trying to get a healthy supper on the table.
As I'm typing this blog, I just realized I prepared two sweet and sour pork dishes practically in the same week. From the December 2000 issue of Gourmet Magazine, I made a recipe for pork chops with sweet and sour cider glaze. While both had sugars (one white the other brown) and vinegar (apple cider and white) and the addition of pure apple cider to the one recipe accentuated the natural sweetness of the sauce.
 
I can't recommend enough the Wegmans pork chops from local farms as also making a difference in a recipe. Fresh pressed, real apple cider from Delicious Orchards is the second component to why this recipe which makes it a winner. The pork was tender and  juicy and prepared in under 30 minutes.

Who can't resist a stir fry recipe! This recipe was in an old issue of Southern Living Magazine. The recipe was submitted by Anna Robinson of Oak Ridge, Tennessee. I love a one pan meal where your protein and veggies are cooked together.  Quick meals for those busy nights, my husband and I enjoyed them; you will too!
