During the hot days of summer, my husband prefers a cold meal, don't we all. However, someone has to be in the warm kitchen to prepare it so that it's cold by the time it's dinner. So today I thought would be a good day to prepare scallops. However, in order to make this as easy as possible, I swung by Whole Foods instead of driving up to Wegmans. Whole Foods had U10's at approximately $30/lb. Discouraged, I left and thought I would go to Wegmans. However, it was too hot by midday so plan B had to be developed.

​A few weeks ago my daughter commented that I didn't have any shrimp in my freezer. How many people keep shrimp in their freezer? Well just in case she and her husband come down for a visit and decide to eat a late dinner, I purchased a bag of uncooked shrimp from Belize from Wegmans....just in case (2 pounds for approximately $15). So plan B dinner has turned into Spicy Grilled Shrimp, a recipe that was submitted to Buon Appétit magazine by Leigh Vickery, in June of  2005. 

To go with this I had some Yukon gold potatoes in the basement, so I quickly peeled and sliced those for cooking so I could make potato salad. I also have some white sweet corn that I purchased yesterday from Delicious Orchards. I am going to make Chili Lime Corn using Williams-Sonoma's Chile-Lime Rub
 and their recipe

Just for the heck of it, I prepared chocolate chip cookie batter yesterday, so I might as well bake those off.
