what are you serving mom for mother's day?

Perhaps you’ve decided to celebrate mom at home this year. I’ll also be at home as I’ll let my son and daughter enjoy the day with their own families. If you’re someone that will be hosting mom and others, here are some suggestions to make the day enjoyable for you too.
 
Brunch is a great option for celebrating. Here are my suggestions for Mother’s Day.
 
If blood oranges are still available, Blood Orange and Grapefruit Juice makes for a wonderful switch from the normal orange juice. ​
If there are children in attendance, Sheet-Pan Chocolate Chip Pancakes is a great choice. I’ve made Individual Zucchini Fritatas with Pecorino and Chives ahead of a family reunion several years ago. Sweet and Spicy Bacon turns the ordinary bacon into the extraordinary.
 
Asparagus and peas are coming into season. Baked Asparagus and Yellow Pepper Frittata, Shaved Asparagus Frittata and Frittata with Asparagus and Scallions take advantage of in season produce.
 
If you’re a small group for brunch, Creamy Baked Eggs with Leeks and Spinach is another option. Starting with the egg recipe, from “Southern Living Magazine May 2022,” you’ll need butter, a leek, fresh spinach, heavy cream, kosher salt, eggs, feta cheese, freshly ground black pepper, freshly chopped chives and toasted English muffins. This was a wonderful recipe and easy to prepare. I was able to get the casserole set up ahead of time so that I could enjoy my guests. 
 
If a late lunch or early dinner is more doable I love Melissa Clark’s Porchetta Pork Chops. The pork came out succulent with a robust flavor; they were fabulous. Another favorite BBQ Rub Roasted Chickens, a recipe from “Southern Living Magazine.” What a delicious, tasty, flavorful chicken! My husband absolutely loved it as he devoured both chicken legs and a wing. The meat was moist and tender. The combination of spices lent a delightful flavor to the meat. 
 
Who doesn’t like pasta? Chicken Tetrazzini is a great crowd pleaser that be made ahead of your guests’ arrival. Pasta Primavera with Asparagus and Peas takes approximately 20 minutes to prepare.
 
Dorie Greenspan’s Whole-Lemon Tart is heavenly! The tart was absolutely delicious! I loved the flavor of using the whole lemon, it was a mild sour, tart taste that made for enjoyable eating. I dusted the top with confectioner’s sugar to add a touch of sweetness. If mom loves chocolate as much as I do, Genevieve Ko’s Flourless Chocolate Cake will leave you speechless. You’ll need unsalted butter, bittersweet or semi-sweet chocolate chips, unsweetened natural cocoa powder, granulated sugar, eggs, and vanilla.
 
I hope my suggestions have inspired you to create a special meal for your wife, mom, mother-in-law, stepmother, grandma, friend who’s like a mom to you or any special person to you that you celebrate on Mother’s Day.
