My son loves to fish. Be it off the jetty or on the ocean he’ll spend his summer days fishing whenever he can. Last week he was fortunate to have a friend invite him on their boat. They left the marina at 6 AM and by 7:30 had caught their limit. My son caught three large strip bass. Lucky for me and his sister, he was kind enough to give a large fillet to each of us. I prepared mine the other evening very simply to let the freshness of the fish shine through. I made my fish en papillote, meaning I placed the fish on a sheet of parchment and proceeded to enclose the fish in a pouch. I did this to keep the fish moist as it baked in the oven. I seasoned the fillet with salt, pepper, EVOO, a sprinkle of panko breadcrumbs and fresh chopped parsley.

With the arrival of warmer weather, soft shell crabs are coming to market. While shopping at Wegmans today, they had in their fish case cleaned soft shell crabs for $6 ea. However, I went down the aisle a bit and saw they had a package of two pre-cooked, tempura coated soft shell crabs for $10. I couldn't resist an easy meal, so I picked up a package pre-cooked crabs for myself. The soft shell crabs had to be heated in a 350° oven, 10 minutes per side. Since my husband doesn't care for soft shell crabs, I picked up a half pound of scallops for him ($14.99/lb.). I prepared the scallops using Wegmans Pan Searing Flour ($2.99) and sautéed them in a bit of butter and extra virgin olive oil.
My daughter and her sister-in-law participate in the Dreyer Farms CSA in Cranford, NJ. Recently when my daughter was down, she brought me the remnants of her CSA box. The box contained some items that I haven't before such as kale, kohlrabi and kabocha squash. As some of the items starting to go beyond their prime, I began researching some recipes to try these item. The holidays are officially over and I have a Sunday off! I'll still be working five days a week and two nights, but my hours are reduced. Hopefully, this will allow me to get back into more creative cooking. This past Friday, my daughter came down for a visit and took me to lunch at Cardinal Provisions in Asbury Park. Oh my goodness, what a hoppin' place it was. Perhaps a lot of people took off for the week or began the New Years weekend early. This was my second time here and my daughter's first. We started off with a cup a soup offered in antique coffee cups, which was a pretty presentation. We both had the green minestrone which was delicious on a cold, windy day. She selected the cuban sandwich (pressed Berkshire ham & roasted pork with swiss cheese, mustard, house pickles on ciabatta), which was served hot and juicy. I chose the chicken salad, but served on a crossiant (poached organic chicken, olive oil, toasted pignoli nuts, tarragon, celery, currants, market greens). It was all delicious and filling. Although in my previous post I mentioned that my husband and I rarely eat beef, it seems this week, we've had it two nights in a row. However, Foodtown had flank steak on sale for $8.99/lb. I can't believe how expensive this cut of meat has gotten over the years. I felt like having some grilled beef, so I got out my recipe for spice-rubbed grilled flank steak, which is a recipe by Ruth Cousineau from Gourmet Magazine, August 2001. During the week I have been making myself tomato sandwiches for lunch. While at Wegmans this morning, I decided to pick up some Antonio's Mozzarella ($7.99/lb) and make a tomato salad for lunch. Using a serrated edge knife, I cut the tomatoes and mozzarella approximately 1/4" thick. I alternate tomato slices with mozzarella. Next I salt the tomatoes, put a chiffonade of fresh basil from the garden and drizzle on some excellent EVOO. Slice up some Italian bread and you have heaven on plate. A few years ago, a co-worker of my husband brought this salad to an office party. My husband was so taken with it that he asked for a copy of the recipe. I don't know where she got it, but it is a wonderful and makes for an easy supper. Some ingredients that you'll need are: LaChoy Rice Noodles, sesame oil, sesame seeds and peanuts. Wegmans has all the aforementioned ingredients. Instead of cooking chicken for this recipe, I purchased a rotisserie chicken and pulled off the meat for the salad. |
